Every year, we make decorated sugar cookies for our family for Christmas. We just bought frozen sugar cookie dough in a tube, and the fun was in the decorating. This year, I decided to make my own cookie dough. This turned out to be complicated because one basic recipe has countless variations! Long story short, this turned out to be our favorite recipe.
Favorite Refrigerated Sugar Cookie Dough
1-1/2 cups white sugar
1 cup or two sticks butter at room temperature
1 large egg
2 tsp vanilla
2-1/2 cups all-purpose flour
3/4 tsp baking powder
3/4 tsp salt
Using a stand or hand mixer, cream sugar and butter together until fluffy. Add egg and vanilla and mix well. In a separate bowl, stir together flour, baking powder and salt. Mix in dry ingredients in thirds until well blended. Divide the dough in two and form a flat patty with each half. Wrap in plastic wrap and keep in refrigerator at least 2 to 3 hours or put in freezer in advance. Each half of the dough will be about the right amount to roll out and cut with cookie cutters without getting too warm.
Bake at 350 degrees for 8 to 10 minutes on parchment paper on cookie sheet.
Change up the recipe by decreasing the sugar to one cup or increase sugar to 2 cups.
Use almond extract or a combination of almond and vanilla extracts.
If you don’t want to buy whole milk and cream just for a recipe, here is how to mix it up. If the recipe calls for one cup of whole milk, you can use 1 cup nonfat milk and 1 tablespoon of margarine. You can melt that and mix it with the milk, or just put them both in depending on the ingredients in your recipe. If you need a cup of cre

Serves 4 (3/4 cup servings)
Note: For a variation float a large marshmallow in each cup or place a stick of cinnamon in each cup.
